Bathua ka saag

Bathua ka saag is a popular dish of eastern UP. It is very delicious, healthyand easy to make recipe specially in winter. We always makeBahuta Paratha, bathua raita , bathua aloo and bathua Puri Bathua is rich in iron and calcium and if you get a recipe that is low on fat and tasty too. You can use this saag like a dip, but it is not chutney, though it is made like one.




Preparation time- 5 min.
Cooking Time- 10 min.
Serving- 2 person

Ingredients-
1bunch bathua 2-3 chopped green chilli 2-3 chopped garlic cloves 1 tespn chopped ginger 1 pinch turmeric powder 1 tespn zeera 1 tespn oil (mustard) Salt to taste




Method-
Clean bathua leaves and wash them in the running water. 
Take a deep pan, add enough water and add bathua leaves. Boil for some 10 minutes or microwave for 5 min.
I always prefer blanch in microwave to avoid any bathua juice waste.


After boiling Place them in a blender jar and grind to make a fine paste.

Til (sesame seed) ke ladoo

Til Ladoo is prepared to celebrate Lohri and Makar Sankranti festivals. It is a delicate, traditional winter sweet, made with roasted sesame seeds, jaggery (gur) and peanuts. This is a perfect warming sweetin winters, and very popular in winter month as sesame is thought to have heating properties.

Preparation Time- 10 min. Cooking Time- 10 min.
Types- Sweets

1 cup til (sesame)¼ cup Peanuts½ cupgur (jaggery)¾ cupwater1 pinch Cardemom powder( optional)1 tespn deshi gheeOil for greasing palm
Method-
Heat a kadai or pan and add 1 cup sesame seeds in it. The pan should not be too hot, but on a low heat. On a low flame roast the sesame seeds. stir at regularly. The sesame seeds pop and change colour. On a low flame this takes about 2- 3 minutes. Remove in a plate and keep aside let it cool. <
