                            Stuffed Aloo with paneer

Today’s recipe is stuffed  aloo with paneer. Authentically potatoes are stuffed with Mava
. But, I wanted to do something different. I stuffed aloo with paneer. Its gravy is made from common onions Garlic and tomatoes. This is nice creamy gravy with delicious stuffed potatoes.

Stuffed Aloo with Paneer
For potato stuffing-
  • Paneer – 2 cup (grated)
  • Cashew nuts – 5, chopped
  • Kismis(raisin) – 10, chopped
  • Green chilies – 2, chopped finely
  • Salt – to taste
 Ingredients for gravy-
  • Potatoes – 6, medium
  • Oil – 2 tablespoons + for deep frying
  • Onions – 1 ½ medium, chopped roughly
  • Ginger – ½ inch piece
  • Garlic cloves - 3
  • Red chilli powder
  • Tomatoes – 3 medium, chopped roughly
  • Turmeric powder – ¼ teaspoon
  • Cloves – 2
  • Cinnamon stick – 1 inch piece
  • Green cardamom – 1
  •  Whipping cream – 2 tbspn
  • Salt – to taste

1.     Heat the oil in a pan for deep frying.
2.     Wash the potatoes. Peel them and cut into half.  Keep them  paper towel.

3.     Once oil is hot enough, deep fry potatoes till they are brown. Drain them and put them on paper towel. Let them cool.

4.     Meanwhile mix all ingredients of stuffing, Paneer, Kismis, kaju,green chilli and salt mix properly and keep aside.
5.      Once potatoes are cool enough to handle, scoop the middle and stuff them.
6.     Heat a teaspoon of oil in a pan. Add chopped onions and cook till transparent. Let them cool little bit. Grind into puree with ginger, garlic.
7.     Take 1 cup of water and chopped tomatoes in a saucepan. Cook on medium heat till tomatoes are soft. Let it cool little bit, remove extra water and grind into puree.
8.     Heat the remaining oil in same pan.
9.     Once hot add onion puree and cook it for 4-5 minutes.
10.                        Add cloves, cinnamon and cardamom, red chilli powder. Cook it for 1-2 minute.
11.                        Add tomato puree and cook it for 5 minutes. (Add water if required as per your liking consistency.) Stir in between.
12.                        Add salt and heavy whipping cream. Mix well.
13.                        Just before serving add stuffed potatoes to gravy and cook it for 3-4 minutes.
14.                        Now your stuffed Aloo with paneer is ready.
15.                        Garnish with  chopped coriander leaves.

16.                        Serve with Rice, Roti or paratha.

Paneer Sandwich...|

               Paneer sandwich

paneer sandwich recipe is very simple and easy to make. Paneer sandwich are very delicious and it is very good snacks with  tea or coffee.

Preparation Time-5 min.
Cooking Time- 10 min.
Serve-2 person

4 Bread
1 cup grated Paneer (Cottage Cheese)
1 Tomatoes
1 Onions
2 Green chilli
1/4 tsp Red chilli powder(as required)
Salt to taste
Butter as needed

Method for paneer sandwich-

·      Chop onions, chilli and tomatoes.
·      Mix the grated paneer with chopped vegetables, salt, red chilli powder and keep aside.
·      Take two bread slices and butter them, put some paneer mixture on one slice and cover it with other bread slice.
·      Put this in sandwich toaster until the bread turns crispy and brown.

·      Serve with ketchup and tea or coffee.
Paneer Sandwich

Stuffed Paneer Paratha

                                  Paneer Paratha-

Ingredients for Stuffing-
Stuffed Paneer Paratha

100 gms Grated Paneer
1 finely chopped Onion
Coriander leaves finely chopped
Small piece of Ginger (grated)
1 or 2 finely chopped green Chilies
Salt,  and Graram masala as per taste
1/2 tsp Ajwain (optional)
Butter or Oil for frying

How to make paneer paratha:

·    Make dough out of whole wheat flour (atta), as you would do for any paratha or roti.
·    Take a bowl and  mix all the stuffing ingredients. (add paneer, coriander leaves, ginger, chopped onion, garam masala , green chilli, ajwain,)
·    Make one  medium size ball and , add the filling to that ball and cover it . Now roll it slightly and make a paratha.
·    Now heat a tawa and cook.
·    Turn it and pour half tablespoon oil or butter.
·    Spread it on the paratha and shallow fry over low heat. Turn it and again pour oil or butter on the other side.
·    Cook on a low heat till golden brown.

·    Serve paneer paratha hot with curd and your favorite chutney or with pickle. 

Paneer Kofta...|

                        Paneer Kofta-

Preparation time-10 min.
Cooking time- 25 min.
Serve – 4 person


Ingredients For Koftas-

200 gms Paneer
2 Boiled Potato
1/2 tsp Red Chili Powder
1/4 tsp Garam Masala
2 tblsp Cornflour
Oil for frying

Ingredients For Gravy-

4 Onion 
4 Tomato
2 spn chopped Coriander Leaves
1/2 cup Curd
1/4 cup Cashewnut paste
1/2 tsp Cumin Seed (Jeera)
 Salt to taste
1/2 tsp Red Chili Powder
1/4 tsp Turmeric
1/4 tsp Garam Masala
1 Bay Leaf 
2 tblsp Ghee or oil

How to make paneer kofta-
·    Boil potatoes and peel them.
·    Grate paneer and potatoes.
·    Add salt, red chili powder, garam masala, cornflour and mix well.
·    Make round balls of this mixture.
·    Now heat oil in a pan.
·    Fry all balls one by one  in the oil till brown in color.
·    Make a paste onion and tomatoes together.
·    Chop coriander leaves very finely.
·    Heat oil or ghee in a pan.
·    Add cumin seed and bay leaf.
·    Add onion, tomato paste and brown it, soute  continuously.
·    When it leaves oil add curd, cashew nut paste, salt, red chili powder, turmeric, garam masala.
·    Sauté  it continuously for a 2-3 minute.
·    Then add 2 cup of water.
·    Put on the lid and simmer for 5 minutes.
·    While serving then add paneer kofta .
·    Garnish it with chopped coriander leaves.

·    Serve with jeera rice or chapatti, Nan, Paratha,
